Under the reflections of the stars, in the evening quiet of the lake, the specialties of the Mediterranean tradition of sea, lake and land come to life. It is here that the expert research of Chef Claudio Santini, and his ancient oriental influences applied to local recipes, reaches its peak.

Tasting itineraries, with pairings of wine or non-alcoholic drinks, and à la carte menus are available for guests of the Grand Hotel Fasano and for visitors.

Born in Civitavecchia in 1991, Claudio Santini became interested in cooking at an early age thanks to his maternal grandmother, who passed on an unconditional love for food. After several experiences in Italy and abroad, at the beginning of 2025 he accepted an invitation from the Grand Hotel Fasano to take on the role of Executive Chef at Trattoria Il Pescatore and the Magnolia restaurant. Today, Claudio Santini is a self-taught professional who trained by learning the tricks of the trade in all the places he has visited. His cuisine is immediately readable, healthy, fully enhanced and built around just a few ingredients.
