Valerio Dallamano was born in Brescia and, after studying Chemistry and Pharmaceutical Technology at university, decided to learn the art of cooking from the late master Vittorio Fusari. In the following 15 years, he travelled to the best Italian and European starred kitchens, refining his taste and skills. After gaining the highest honours, including a Michelin star in Venice, he returned to his hometown on Lake Garda to start his collaboration with the Grand Hotel Fasano in 2026.
